So yesterday me and the kids were laying on the floor looking out the door. We could see the perfectly blue sky and all the fluffy white clouds. We decided that today we wanted to create the clouds. We also added a rainbow and the sun.

Chop the chocolate into small pieces and melt in a small heavy saucepan or in the top of a double boiler over simmering water. Stir occasionally until melted. Add the hot chocolate mix and sugar, stirring constantly until blended.Remove from heat and slowly add 1/2 cup of the milk, stirring until smooth. Cool to room temperature.
In a blender, place the remaining 1 cup of milk, the chocolate mixture, and the ice. Blend on high speed until smooth and the consistency of a frozen daiquiri. Pour into a giant goblet and top with whipped cram and chocolate shavings.
I first got the idea from The Cornerstone Coffee shop. They do one similar to this but of course mine is less on calorie count. I only added whip cream for the photographs. I don't usually put whip cream on it. But it is yummy!!!!
Green Tea Fruit Smoothie
1 1/2 c hot green tea of your choice *i use Good Earth*
1/2 c coconut water *i use Vita Coco www.vitacoco.com
1-2 Tbsp Agave nectar or to taste
1 12oz bag of frozen fruit of your choice
i use fresh fruit too
Add all ingredients to blender, blend well on high, until smooth. If the mixture is too thick add more coconut water. Pour into glasses and enjoy!!

Buttermilk Berry Muffins
2 1/2 cups (325 grams) all-purpose flour
3/4 cup (150 grams) granulated white sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Zest of one orange or lemon
1 large egg, lightly beaten
1 cup (240 ml) buttermilk
1/2 cup (120 ml) safflower or canola oil
1 teaspoon pure vanilla extract
1 1/2 to 2 cups (360-480 ml) fresh or frozen berries (blueberries, raspberries, or blackberries)

Honey Soy Sesame Salmon over Rice
4 center cut skin-on wild salmon fillets, about 6 ounces each
1/3 cup honey
2 tbsp agave nectar
2 tbsp soy sauce
2 tbsp oil
1 tbsp fresh lime juice
2 tsp. toasted sesame seeds
1 tsp minced garlic
1 tsp minced onions
3/4 tsp ground ginger
1/2 tsp crushed red pepper
1/3 cup sliced green onion
1/4 cup cilantro chopped
1/4 cup cilantro chopped
Mix honey, agave nectar, oil, lime juice, and soy sauce together and all the spices. Place salmon in the bottom of a greased 13x9" baking dish. Spoon mixture over salmon. Cover with cilantro & onions.
Roast salmon in preheated 375 degree oven for 20 minutes or fish flakes easily with a fork.
Serve over rice with cooked edamame.

2nd Annual Drag the Gut on third street in McMinnville.
So I had the pleasure of riding along in my dad's '67 thunderbird and draggin' the gut. It was much funner then I had anticipated. Funner then when we were kids riding in the car to church with windows that didn't work in 100 degree weather. I couldn't believe how many people and cars there was. It was a ton of fun.
